Pan-fried skate with capers and beurre noir



Ingredients
- 2 small skate wings
- 100g butter
- 2 tbsp capers
- 2 tbsp finely chopped parsley
- 2 – 3 tbsp white wine vinegar
Preparations

step 1
Season the skate wing with salt and pepper
step 2Meanwhile, melt the butter in a frying pan, over low heat
step 3Add the fish to the pan and raise the heat to medium-low. Cook, basting the fish on a regular basis with the hot butter. The cooking time will depend on the thickness of your fish.
step 4When the fish is cooked through, lift from the pan and place on the warmed serving plates
step 5Raise the heat to high and if the butter is not browned by now, leave it to foam and brown a little.
step 6Add the capers
step 7Add the vinegar. !!! Beware as it will splatter !!! and take off the heat
step 8Add the parsley and pour over the fishTraditionally, this is served with some boiled potatoes and carrots.Serve immediately
