Braised rice with mushrooms (riz pilaff aux champignons)

Ingredients

  • Butter 50g
  • Chopped onion – 25g
  • Rice – 100g
  • white stock – 200ml
  • Button mushroom – 50 – 100g
  • Salt
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1.5 tablespoons lemon juice

Preparations

    step 1

    Place 25 g (1 oz) butter in a small sauteuse. Add the onion.

    step 2

    CooK gently without colour for 2-3 minutes.

    step 3

    Add the rice and well-washed sliced mushrooms.

    step 4

    Add twice the amount of stock to rice.

    step 5

    Season, cover with a buttered paper, bring to the boil.

    step 6

    Place in a hot oven 230-250°C (Reg. 8-9; 50-500° F) for approximately 15 minutes until cooked.

    Remove immediately into a cool sauteuse.

    step 8

    Carefully mix in the remaining butter with a two-pronged fork.

    step 9

    Correct the seasoning and serve.
