Devilled sauce (sauce diable)


  • 250 ml of dry white wine
  • 1 Teaspoon of vinegar
  • shallot chopped
  • a sprig of thyme
  • a piece of bay leaf
  • one tablespoon of flour
  • a tablespoon of tomato sauce
  • a-spoonful of French mustard
  • 25 Gr. of butter


    step 1

    Heat up a small saucepan with the wine, vinegar, shallots, thyme, bay leaf, salt and pepper, meanwhile, put the butter in another small saucepan with a tablespoon of flour, stir over moderate heat until the flour is toasted, then add a cup of warm water into which you have dissolved the tomato sauce.

    Cook for 15 minutes

    When the wine and the vinegar will be reduced- you pass the sauce through a sieve and mix it with the flour

    Let it cook over medium heat for 10 minutes and add you to the top French mustard
