Devilled sauce (sauce diable)
Ingredients
- 250 ml of dry white wine
- 1 Teaspoon of vinegar
- shallot chopped
- a sprig of thyme
- a piece of bay leaf
- one tablespoon of flour
- a tablespoon of tomato sauce
- a-spoonful of French mustard
- 25 Gr. of butter

step 1
Heat up a small saucepan with the wine, vinegar, shallots, thyme, bay leaf, salt and pepper, meanwhile, put the butter in another small saucepan with a tablespoon of flour, stir over moderate heat until the flour is toasted, then add a cup of warm water into which you have dissolved the tomato sauce.
step 2Cook for 15 minutes
step 3When the wine and the vinegar will be reduced- you pass the sauce through a sieve and mix it with the flour
step 4Let it cook over medium heat for 10 minutes and add you to the top French mustard
