Madeira sauce


  • 2 cups demi-glace
  • 1/4 cup Madeira wine
  • 1 tablespoon unsalted butter


    step 1

    In a heavy-bottomed saucepan, bring the demi-glace to a simmer and let it reduce for about 5 minutes.

    step 2

    Stir in the Madeira wine and swirl in the butter. Serve right away.
